ABOUT THE CHEF:
Peter Dale is a native Athenian and graduate of Cedar Shoals High School, and the University of Georgia. Dale earned an A.B.J. degree in public relations in 1999. Following work in politics in Washington, DC, and higher education back in Athens, Dale decided to pursue an interest in cooking. He began as an apprentice at Five & Ten, and continued his culinary education through travels and work in Spain. In 2007, Dale and Hugh Acheson, chef of Five & Ten, opened The National in downtown Athens. The National sources from local farms and creates dishes inspired by travel around the Mediterranean.
In 2014, Dale opened Seabear Oyster Bar with The National's former sous chef, Patrick Stubbers and Condor Chocolates with his brother, Nick Dale. Seabear serves a fresh selection of oysters daily alongside a small menu of sea and land offerings. Condor is a bean-to-bar chocolate shop/café and manufacturing facility, specializing in cacao from Ecuador, his mother's homeland.
In 2012, Dale was named Food & Wine magazine’s The People’s Best New Chef Southeast. That same year, Dale was honored by industry group, Star Chefs, as an Atlanta-area Rising Star Chef, and named to the the University of Georgia's list of Forty Under Forty alumni. In addition to culinary pursuits, Dale has served on the boards of the Athens Farmers Market, Boybutante Aids Foundation, Grady College Alumni Board, and Athensmade, an economic development organization. Dale has a terrier named Ollie, and enjoys travel, music, running, swimming and cycling.

ABOUT THE AUTHOR:
Juanina Kocher is a native Athenian and graduate of the University of Georgia. She moved to New York City after graduation and began her career in the NYC hospitality scene. Juanina started working with Chef Richard Sandoval in marketing and food PR before transitioning into special events. She has worked with restaurants such as Southern Hospitality BBQ, RedFarm, & The Little Beet Table, and planned events for clients who include Lee Schrager, Julianna Moore, & Jean Georges to name a few.
Juanina is a supporter of several charities including City Harvest and Pencils of Promise where she, along with the help of many contributions, recently built a school in Laos. She is a member of the Toklas Society, a not-for-profit organization for women in food and hospitality helping to provide inspiration, mentorship, and community. Her most recent “passion project” is Classic City Cooking, a cookbook based on the restaurants and chefs of her hometown, Athens, Ga.
While Juanina loves to visit Athens as much as possible, in New York she enjoys spending time with her husband, Ryan, and fur baby, Phoebe. Juanina enjoys eating & cooking (of course), yoga, boxing, and long walks in her Brooklyn neighborhood.
